A cinnamon-spiced carrot cake with optional raisins and pecans.

Ingredients
Instructions
Mix dry ingredients.
In a different bowl, beat together sugars and oil.
Add eggs and vanilla to wet ingredients and combine well.
Slowly add dry ingredients to wet ingredients.
Hand-stir in carrots.
Grease cupcake liners or a cake pan and bake for 20–22 minutes at 350°F.
Notes
Add raisins and pecans if desired.
